While using the trial license for MATLAB and SIMULINk, I purchased a license. Now that the trial period is over, I am locked out. How do I transition to my purchased license?

MATLAB's license system is designed to let the trial have priority while it lasts, because the trial usually has additional features that your license does not.

Unfortunately, sometimes MATLAB gets caught on the expired trial license and does not properly look for the valid license.

The work-around is to delete all the license files and then re-activate.

You could possibly just delete any license files marked "trial". However, in general, it is common for people to get trial licenses for toolboxes they are considering purchasing, and then when they bring in the new license after purchase of the additional toolboxes, the new license does not always end up in the same directory as the old license, so it is safer/easier just to delete all of the licenses for that version and re-activate to avoid having competing licenses.
